Beginnings: After discussing his vision for a coffee shop to a fellow flight passenger, founder Stephen DiMare was given spot on feedback about the need to offer Mexican style gourmet popsicles. In 2009, The Hyppo started as a modest stand in St. Augustine's historic district.
Flavors: The inspiring woman Stephen met at the wedding told him that popsicles could contain anything from 'cucumbers to fresh pineapple or jalapenos'. Get a load of these choices which are updated regularly...

I highly recommend pistachio coconut. It makes for a great combination of flavors. It's smooth meets crunchy all in icy popsicle form. It's no wonder that what started as a small stand on St. George street has continued to grow into a trendy eatery that shows no signs of slowing down. I always take my friends from out of town to The Hyppo to experience something memorable and unique. The staff is consistently friendly and outgoing. Hang on to a stamp card and every 9th pop is on the house.
